Mark Timber and Judy Timber are the husband-and-wife team behind Double B's BBQ, one of the Milwaukee area’s best-known barbecue businesses. The Timbers took over Double B’s in 2015, transforming what had been a neighborhood bar and grill into a Memphis-style hickory-smoked barbecue destination. Mark Timber, a longtime restaurant industry veteran, had spent decades working in food service — including stints with Milwaukee-area restaurants and steakhouses — before turning his backyard meat-smoking hobby into a full-time business. Mark is known for a traditional “low and slow” smoking philosophy using hickory wood and simple dry rubs. He has described his approach as letting “the hickory and the meat speak for itself.” The restaurant became especially known for ribs, brisket, pulled pork, smoked wings, and creative items like “Bacon Balls” and the “Redneck Sundae.” Judy Timber has played a major role in the business operations, branding, hospitality, catering, and event side of the company. Customers and reviewers frequently highlight her communication skills and event coordination, particularly through the company’s wedding and catering services. Under the Timbers’ leadership, the business expanded beyond the restaurant itself: • They launched the Timber’s Authentic Milwaukee Style BBQ food truck in 2016. • They significantly expanded their catering operation for weddings, corporate events, and festivals. • In 2021, they moved into a larger adjacent property with a larger catering kitchen to support growth. Double B’s developed a strong regional reputation and has appeared on numerous “best BBQ” lists in Wisconsin. In 2024, national food rankings cited Double B’s as Wisconsin’s top barbecue spot, praising the Timbers for reinventing the restaurant into a standout smokehouse.
